Executive Chef Daniel Bartlett cooks somewhere between Colorado's landscape and classical French technique. Thirty years and twenty-odd kitchens got him here: culinary school in Denver, then award-winning rooms in New York, Chicago, and the Virgin Islands, and finally back to Colorado Springs, where he's from.
"Colorado gives me the identity," he says. "Technique gives me the language to express it."

Ask Bartlett what he'd put in front of a critic and he doesn't reach for the most complicated thing on the menu. He points at a taco.
The braise runs about eighteen hours. The technique underneath is French classical, the influence is Spanish, the ingredients are Colorado. He picks it because there's nowhere to hide: when a dish has only a few components, every one of them has to be right. The braise, the tortilla, the seasoning, and a garnish that has to earn its place by contrast rather than decoration.
